M2 English Style Leather Paring knife

M2 English Style Leather Paring knife

These M2 steel knives are much lighter and smaller than the A2 ones. Additionally, I find the M2 steel is slightly quicker to sharpen than A2, and easier to strop back into shape. Partially this is due to the smaller surface area of the bevel. Comparison of steels. The edge holding ability is outstanding. Since the handle is mounted on the top of the blade, you can hold the knife at a very shallow angle for long, even bevels and edge paring. The comfortable top mounted wood handle provides ergonomic gripping covered, and is covered vegetable tanned leather. The handle area is about 1/2” thick at the thickest area and 6 inches long. M2 Steel, HRC 65. 8" x .875 x .048”
